He took predator watch seriously and kept the hens moving with a confidence you can't teach. The Beard backed him up on perimeter patrol.
More than a mascot
A good rooster is part of a healthy free-range system. Joseph helped organize the flock and sounded off when something was wrong, which is why guests remembered him long after they left with a dozen eggs.
